Minute Recipe: Goat Cheese Toast. Jacques makes the sweet, nutty flavors of winter squash tickle the palate with a warm and creamy Butternut Squash Velvet whilst he admits to supplying his brother with seeds of this New World squash. Blossoming roses of creamy fish in Fillet of Sole with Mushroom Sauce are paired with Peas, Mushrooms and Endive along with tips to help keep your sauce from breaking. The meal ends with an unusual combination of Seckel Pears in Coffee and a grated chocolate garnish.

@burningsinews It is just a habit I think. I like his choice of water…Chateau Faucet.

@burningsinews mcmades2 – he does this to ‘square’ his knife to the board (90 degrees) and to assure a ‘proper’ grip to the handle of the knife…

I feel this is one of the most honest shows I’ve seen in my life. I owe this week to Jacques Pepin for being such an entertaining cooking host without having to try.

I like the way he remembers Julia. I don’t think that was scripted…

“… maybe somebody did something to my wine, so just to be sure” (drinks wine). Lol – that’s so typically French, it’s hilarious and awesome :D

This is how 30 minute meals should be. Simple ingredients and a calm chef. Not some arrogant woman with a screechy voice.

@leontine78 Glad you liked it :) I’m not a stickler for measurements (as you probably saw in the video!) but go with 1 teaspoon.
I’ve used rolled oats, quick cooks oats and oatmeal before and they all work well (without flour) but I just like the texture of the rolled oat muffins so much more :)

Hi Kieran, great recipe thanks. I am just a bit confused is it 1 teaspoon or 1 tablespoon of baking powder?? On your site is says teaspoon but in the video you say tablespoon?
I made one batch with the rolled oats but ran out for my second batch and had only quick oats left. I added a bit of sr wholemeal flour and some oat bran. they rose up beautifully.

@EveryNina i don’t think they will be moisty enoiugh or stick together if you don’t add the apple sauce. but experiment away and let me know if it works! :)

@fishfoodme , hey, it’s about 1/4 of a cup, but if you like it healthier (cocnut is quite high in fat) then use cocnut essence, or try some other flvaours like apple sultana, pear and date, coffe wlanut, orand almond etc :)
