i saw the blueberry pancake episode of america’s test kitchen the other day, and was immediately enthralled by the way the double-acting baking powder visibly worked when the pancake was flipped over to cook the second side. it puffed up! visibly! amazing! so i made those pancakes this morning and was very thrilled when i watched the baking powder (and baking soda — these are buttermilk pancakes) puff up the pancake in the pan.

also they are delicious. my conclusion is that the trick is to not serve the pancake hot out of the pan, but instead let it sit for at least two or three minutes. they are not steaming hot when they’re served, but the inside isn’t gummy or tacky — just fluffy.

A++, america’s test kitchen. once again you prove that for every recipe that is awful, bland, or just plain doesn’t work, one of your recipes is freaking amazing.

ps, nature, way to go with the peaches.
