In this video, Betty demonstrates how to make a gorgeous and flavorful Summertime Fruit Salad. The in-season fruits of peaches, blackberries, and bananas are used in this salad, and it is bound together with a tangy lemon sauce. Very Refreshing! Ingredients: 3 medium-sized peaches, peeled and sliced 3 medium bananas, peeled and sliced 1 pint blackberries, washed and drained. 1/4 to 1/2 cup lemon juice (freshly squeezed or reconstituted) 1/2 cup Splenda (or sugar) Slice 3 peaches and 3 bananas into two separate bowls. Immediately cover each bowl of fruit with up to 1/4 cup of lemon juice to hold the color and freshness. Wash and drain 1 pint of blackberries into a separate bowl. Now, use a large bowl, and combine the 3 prepared fruits (including lemon juice). Add 1/2 cup Splenda or sugar. Stir gently, so that the blackberries will not bleed into the other fruits. When completely blended, pour the fruit mixture into a nice, clear serving bowl. Cover with plastic wrap, and refrigerate until ready to serve. This is a great salad for using seasonal fruits; it looks and tastes lovely!

Hi Betty as an alternative to all that Splenda/Sugar I user juices such as OJ and/or Pineapple Juice(Not the concentrated ones) The juices blend fabolously with the chopped fruits, particularly if there are raspberries or strawberry’s in the fruit salad. Love your work as always!

Actually, this bowl is not an antique, because I remember purchasing it about 30 years ago at a store like TJMaxx. (Of course, I’m getting to be pretty much of an antique myself, so that may qualify!) Seriously, it was not a name brand–I just liked it.

With the lemon juice, it will last longer than your typical fruit salad–maybe about 5 days. You will know when you need to start using it up, if the bananas start turning a little brown. If you leave out the bananas, it will easily last a week! Thanks for your question!

I wanted to give some more ways to use peaches and blackberries in season. We had already done a parfait, plus a blackberrry cobbler, a peaches and cream crunch, peaches with brown sugar & sour cream dip, and I wanted to give one more (easy) idea! Thanks for your comment!

Thanks Betty for this great idea…..I have just recently…within the past 4 months really started cooking. I am a professional photographer, but cooking is now my hobby! A question about this…how long would you keep it in the refrigerator? When would it begin to turn or go bad?
That last bowl is just as beautiful as your fruit salad. I dont suppose you could announce what year it was made as someone might think you a snob but could you whisper in my ear if this is one of your antiques??
