In this video, Betty demonstrates how to make a gorgeous Sour Cream Coffee Cake. It is filled and topped with a luscious mixture of brown sugar, pecans, and cinnamon. Its just the best!!! Ingredients: 2 sticks butter or margarine (1/2 pound), softened to room temperature 2 cups sugar 2 eggs, well beaten 1 teaspoon vanilla extract 8 oz. carton sour cream 2 cups self-rising flour ½ cup light brown sugar, firmly packed ½ cup chopped pecans 1 teaspoon cinnamon In a medium-sized bowl, cream together ½ pound butter or margarine and 2 cups sugar. Set aside. In a large mixing bowl, beat 2 eggs, and add 1 teaspoon vanilla and 8 oz. sour cream. Stir well. Add in the butter and sugar mixture, and stir until well-combined. Now, mix in 2 cups self-rising flour. Set aside, while you make your filling/topping. In a small bowl, stir together ½ cup brown sugar, ½ cup chopped pecans, and 1 teaspoon cinnamon. Spoon half of the cake batter into a well-greased and floured tube pan. Spread out evenly, and sprinkle ½ of the brown sugar-pecan filling over the top. Spoon the other half of the cake batter over the first half of batter and filling, smooth out, and top with the remainder of the brown sugar-pecan filling/topping. Bake at 350 degrees for 1 hour. Let cool in the oven with the oven door open for 1 hour. Remove pan from the oven, and transfer the coffee cake from the pan to a nice cake plate (top-side-up). This is not only a beautiful coffee cake, but its taste is splendid!

mmm, looks good.
@bettyskitchen
Oh.
‘Sorry.
I’d forgotten the dog cookie vidio that you made with Remy in Febuary.
I’ve never baked anything for our dog’s birthday (maybe I should).
Instead, I go to a local dog-boarding place where we somtimes board her, and buy a big dog cake for her there.
They’re shaped like dogbones, and filled with peanut butter, then covered with caorob-frosting (like chocolate, only they’re not poisionous to dogs), and it says “Happy birthday!” in blueberry frosting on top.
@SinnFein4ever Yes, Remy gets special food on his birthdays and wrapped packages containing dog treats, which he rips into.
–Betty :)
@bettyskitchen
I’ve had days like that. ;)
By the way, do you celebrate Remy’s birthdays?
@SinnFein4ever Oh, yes! Carter was just quietly playing with a puzzle and looked up and was startled by the camera. He was in no mood for having his picture taken!
–Betty :)
@bettyskitchen
I saw him at the very begining in the bloopers vidio that you made for Halloween.
As I recall, he looked like he was trying to get Carter to play with him, then Carter noticed you (or was that Rick?) filming him, and said “No! NOOOO!”, jumped up, and ran off.
Poor Remy looked a bit startled; and trotted off in the opposite direction.
(laughs)
@SinnFein4ever Remy is fine. If you listen closely, you will hear him in some videos that are coming up soon!
–Betty :)
@bettyskitchen
I haven’t seen him in any of your vidios since Halloween.
Is he alright?
@SinnFein4ever Cat treats are something that I have never made. I’m sure Remy would think they were for him if I made some!
–Betty :)
@bettyskitchen
Like how to make cat treats?
(Although Remy would probbabbly scarf them down if you did .)
;)
@SinnFein4ever I’m sure there is a lot that I don’t know!
–Betty :)
@bettyskitchen
Is there anything about baking that you DON’T know?
XD
@SinnFein4ever A tube pan is fine for coffee cake. To see the use of a springform pan, just search for cheesecake.
–Betty :)
I have a coffee cake recipe which calls for the use of a “springform pan” (which I’d never heard of before).
I looked it up on the net, then decided to see what YOU use, before going through all the trouble of buying myself one.
Fourtunatly, I DO have a tube pan.
Thanks, Betty!
@gansvv Beating it more will make it fluffier.
–Betty :)
Looks delicious. :)
Do you have to beat/ mix the batter more to make the cafe fluffier?
