”Succes” with coffee buttercream and grilled almonds

”Succes” is the name for the meringue. Its white eggs with sugar and almond powder. Delicious!
We bake the ”succes” in spiral circle and we put the buttercream all around.

Succes recipe
Almond powder 150g
cornstarch 40g
icing sugar 100g
white eggs 180g (6 eggs)
sugar 50g

Sift almond powder with cornstarch and sugar ice on a parchment paper.
Mounting egg whites until they are close. Add the sugar until there you have a very strong mix.
Add little by little (rain) the dry mix in the meringue. Fold mixture does not it collapses.
Add in a pocket and make spirals
Makes 28 slices

Buttercream recipe
300 ml white eggs
600g sugar
600g butter

Mix whites with the sugar in a bain-marie until the grains disappear (do not boil or too warm.)
Although cream butter in batter-mixer and put in a bowl
Getting eggs from the robot-mixer until the mixture is pretty cold.
Stir in butter a little at a time. Once the emulsion is made, add the flavor (vanilla, cofee, chocolate

I was so excited! The local Asian supermarket had Tamaki Gold rice in stock. It’s my favorite rice, grown and milled in the Sacramento Valley. To celebrate, I broke out my dollar store mini nigiri molds (stars, hearts, teddy bears — sorry, no horseshoes or red balloons, lol).

I also made cucumber and wakame sunomono along the lines of Maki’s recipe on www.justbento.com.

I found this great eco-friendly waterproof lunch bag with ladybugs all over it at Whole Foods, so I bought it to go with my "I’ve found an apple!" ladybug bento box. :)
