Oat Pumpkin Pancakes
(vegan, wheat-free)
This recipe makes about 5 BIG pancakes or you can absolutely make smaller size pancakes! Feeds 2 hungry people (vegan or non-vegans). Also since I like to use oat flour instead of wheat flour these pancakes are ridiculously MOIST and delicious.

1 cup oat flour
1 super ripe banana
1 cup soymilk
1/2 cup pumpkin puree
1 tbsp safflower oil (sunflower or canola oil work too)
1 tbsp agave nectar
1 tbsp baking powder
1/4 tsp sea salt
dash ground cinnamon
pinch ground nutmeg
pinch ground ginger
pinch ground cloves
Optional garnish: pumpkin seeds, pomegranate

1. In a large bowl stir together the oat flour, baking powder and sea salt. You can make oat flour by using a food processor to grind up some fast cooking oats. I actually use a coffee grinder to make my oat flour – makes it super fine!

2. In another bowl mash the super ripe banana then add pumpkin puree, soy milk, oil, spices and agave. Mix well.

3. Add wet ingredients into dry ingredients and mix. Lumps are okay.

4. Heat up a pan or two and add some high heat oil such as sunflower, safflower, or coconut oils.

5. Add batter to pans that have been pre-heated to a low-medium heat. You choose the size and shape you want! First side will be anywhere between 5-8 minutes and second side up to 5 minutes. Just follow the same technique for any other pancakes here!

6. Serve and garnish at will! Add some pumpkin seeds, pomegranate, earth balance, agave nectar or maple syrup….and so on!

Pretty productive day today!

- Last night I had a crazy dream starting with McCain saying his Bomb bomb bomb Iran thing and then me and Z running from bombs visibly dropping and then him saying "So much for your precious America!" and then I knew we were going to die. After I told Z my dream that really shook me he told me he had a dream that his beard was so long it had become dreadlocks. Seriously, wtf?
- Went with Jenny to the French Fall Market at Lycee Francais de Chicago. Got the stuff in this photo. Yay bell jars!
- Went to Whole Foods with Jenny too.
- Came back and napped.
- Made butternut squash risotto (link: www.elise.com/recipes/archives/006126butternut_squash_ris… ) which took hours with prep time included, but in the end I do believe it was worth it. I finally opened up and used the Magic Bullet to get the butternut squash to the consistency I needed it. I’ve had that thing nearly 2 years now.
- I had gone to Eliza’s to borrow some spices earlier and she came over twice (once for my leftover squash and the second time for oats).
- Ginny came over to bring me whipping cream I needed and and drank some coffee and then left.
- Then I made a pumpkin honey pie (link: allrecipes.com/Recipe/Pumpkin-Honey-Pie/Detail.aspx ). Won’t be trying that until Eliza’s party tomorrow, but damn I’d like to.
- Watched Masters of Horror: The Washingtonians while the pie was cooking. A most excellent cheesy horror film about George Washington being a cannibal.
- Now we are watching Velvet Goldmine and I am missing Laini hardcore. It’s been almost a year since she died.
