Vegan caramel macchiato ‘cheesecake’

I was lucky enough to be on the receiving end of this cake – it was made for me by my lovely fiance :)
The recipe was from ‘My Sweet Vegan’, Hannah Kaminsky. No surprises that this cake was goooood! *drool* The caramel sauce and coffee is a great combination.
I may well find myself up at some early hour tomorrow morning: head in the fridge, spoon in hand, gouging at the leftovers.
persimmon liqueur

after making the quarante quatre, i bought another bottle of vodka and made a different liqueur. some odd robotic shark friends gave me a fruit and vegetable basket that had a couple of persimmons in it, and i decided to use them. the process is essentially the same as with the 44, but i left out the coffee beans and used honey instead of sugar. it’s the honey causing the cloudiness at the bottom of the bottle, i think, even after several strainings, so i think i’ll revert back to sugar or try to process the honey differently next time. apologies for the label – i used a leftover cognac bottle and didn’t strip it first.
the taste? sweeter and lighter in intensity than the quarante quatre, with less of a bite. and since i don’t drink often, this will likely be around for a while. i like making these, and have more that i want to try (partly to refine the process, partly because i like the odd taste of things that really aren’t available to purchase easily, and because i get satisfaction from making new things, especially kitchen stuff), but as a rare drinker they’re slightly ridiculous.
