Currently the fav within the family circle. But I’m getting sick of these already… hahaa…

These are shortbread cookies with the addition of pistachio nuts and cranberry pieces. Wonderful with coffee or tea.

Pebbernodder – The dry guys

What follows is a pictoral explanation of my great-grandmothers recipe for peppernodder, a danish cookie that my grandma would always make us around Christmas. They are small, hard, crunchy, and not too sweet. Perfect with coffee or beer or any food or any other desert.

Wisk together 4 cups of flour, 2 tsp of baking powder, 1 1/4 tsp cardamom and 1 tsp ginger.

Cardamom is a little expensive, but it has this wonderful peppery taste that makes the cookies great. You can sometimes buy a small amount in the bulk section of a specialty grocery, if you don’t want a whole jarfull.
