Vanilla mint “oreos” with espresso

I mostly followed a recipe from my ATK Family Baking book that tries to offer a path to home-made Oreos. I added mint to the stuffing just ‘cuz I love mint.

For desserts, you really want to take a little more time and make things look beautiful. Dessert is optional, it’s fun, and aesthetics are a bigger part of it than when you’re making, say, potato salad. The cookies didn’t look as polished as I’d like… they should be round instead of squished, so next time I’ll make sure to roll and slice things more carefully.

Next time I want to grind the coffee much more finely. As it is, it’s too noticeable in the cookie part.

Finally, I might look around for some black dutch cocoa. The brown just doesn’t look very Oreo-like.
