Cheese Blintzes

Yet another recipe from my good housekeeping cookbook I got for christmas. I’m beginning to trust it more and more. These are cheese blintzes- crepes filled with a sweet cottage cheese/ cream cheese filling. I even bought frozen berries to go on top (though they were expensive). It was worth it, though.

No. 23: Irish coffee gateau

Recipe (serves 8): Dissolve 2 tbsps instant coffee powder in 1 dl hot water. Add 50 g sugar and heat until dissolved. Then boil for 1 minute. Remove from the heat and let cool. Add 3 tbsps of Irish whisky. Carefully melt 300 g dark chocolate with 1,5 dl double cream. Pour into a bowl and add another 1,5 dl double cream and 200 g Greek yoghurt. Leave to thicken a little (happens when the chocolate cools down). Spread a thin layer of the chocolate cream into a rectangualr mould (approx. 10 x 23 cm). Briefly dip one-third of 200 g Savoiardi biscuits (or Lady fingers) into the coffee syrup, and place into the chocolated tin. Cover with chocolate and repeat two times (three layers of biscuits). Finish off the chocolate on top, and leave in the fridge overnight . Decorate before serving. Note: I skipped the overnight chilling, and soaked the Lady fingers too much, thus giving a somewhat messy, yet very tasty (and rich!), result. I decorated with heated forest-berries (frozen mix found in Norwegian groceries), which worked wonders with the heavy chocolate-cream-stuff.
